Vietnam is famous for its rustic and delicious dishes. Any dish is easy to eat, but for me personally, I like spring rolls the most. Spring rolls are thin rolls, smaller and more crispy than Chinese spring rolls, but with a stronger flavor. They are filled with pieces of crab, shrimp, chopped vegetables, onions, mushrooms, vermicelli and eggs. To prepare them, you put the above filling on a thin rice cake, roll it up and fry it. Finally, spring rolls, when fully cooked, are wrapped in some fresh vegetables, then dipped with fish sauce. My mother often cooks spring rolls for me, especially on important days of the year, such as New Year's Day. When I eat them, I feel all the love my mother has for me.
